Description
100 year old Carignan vines YIELD & SOIL - 40 hl/ha - Chalky clay soil & river pebbles. VINIFICATION - Hand harvest end of September / early October,. Very ripe, grapes are carefully selected & put directly in vat. A 3 week maceration follows to extract the fruit and the tannins. The wine is then aged in vats throughout the winter, to stabilise & round the tannins. It is then refrigerated for tartaric stabilization. EYE - Light garnet red. NOSE - Red stone fruits aromas and hints of mediterranean plants. MOUTH - Rich tannins, and dominated by notes of red and black fruits. Very mineral.
