Harvest : parcelar selection. Hand-picking when grapes reach maturity. Winemaking : after traditional fermentation, mutated on marc with "vinique" alcohol. Ageing : in old oak barrels for 10 years. Wine tasting: ageing in old casks gives this wine a mahogany/topaz robe. This grand cru develops spicy and ripe fruit notes. Food and wine match : good length, with roasted aromas this grand cru offers a wide possibility of culinary pairings. Its sugar/alcohol balance allows it to marry wonderfully well with tonka beans based dishes. A wine for meditation and a perfect marriage with Havana cigars.
