100% hand-picked. This wine is designed to improve in the cellar over 6 to 12 years. Each variety is chosen from selected vineyard plots, fermented in a combination of stainless steel and open barrels. Ageing is in a careful selection of new and used oak barrels chosen each vintage to suit the wine. No fining agents used. Aged in bottle for 3-5 years before release. Showing some developed notes but will continue to improve for several years.
