Description
Yield 18HL/HA – south facing vineyard on hillside – old vines Grenache Noir. Sedimentary marl and schist soils. Organic cultivation. Long temperature-controlled maceration and fermentation in concrete tanks. The fermentation is ‘muted’ with grape spirit to retain the sugars in the wine. Aged in solera of 2 vintages 1998 and 2003 in ‘demi-muid’ barrels which allow a gentle oxidation of the wine in the cellar.
